After careful manual selection and harvesting, the grapes are subjected to crushing and total stemming. This is followed by a period of 24 hours of pre-fermentation Maceration at 30oC to maximize the action of the grape enzymes responsible for extracting colour and aromas. Selected yeasts are used to induce alcoholic fermentation, which takes place between 22oC and 24oC for a minimum of 10 days. Malolactic fermentation induced with temperature control. Stage in a small volume stainless steel tank.

Tasting Notes:
Deep ruby. Intense aromas of wild fruits - blackberries and blueberries; fennel and white pepper. Complex, fresh and focused. Beautiful bluish fruit, intense, juicy, good gravity, high concentration, good balance between structure, body and silky texture; ends long, tense and very persistent.
Store and Serve Advices:
Bottle lying down, room temperature with small temperature range (14ºC to 18ºC), humidity of 60% and protected from light. Serve at a temperature between 16ºC and 18ºC.

Grilled meats or in a light sauce, soft cheeses, salads.
