The technology was minimalist, to allow the expression of grape variety and terroir. After crushing the grapes, selected yeasts were inoculated. Fermentation took place in a stainless steel tank at a temperature of around 25 °C, with pumping over with aeration being carried out regularly. After malolactic fermentation, the wine aged for eight months in oak barrels, to gain some complexity.

Tasting Notes:
Open ruby color. The aroma is rich, attractive and dominated by delicate but expressive aromatic notes, typical of wines with a gastronomic sense. In the mouth, the lightness, richness of the flavor and lively acidity stand out, giving it a surprising finish.
Store and Serve Advices:
Serve at 16 º C, when young, and around 18 º C, with more than five years old. In this case, a slight sediment may form, which justifies its decanting before serving.
Food Pairing:
While young, it is especially suitable for strong dishes and intense flavours, including octopus, cod with bread or hare with white beans. Over time the bottle is becoming more complex and round up the tannins, becoming perfect for the leg of lamb in the oven or partridges.
