After being harvested by hand into 20kg boxes, the grapes are transported to the winery where the bunches are selected and destemmed. After a light pre-fermentation maceration, the bunches were gently pressed. The resulting must was clarified at a low temperature and fermented naturally in stainless steel tanks at a controlled temperature of between 14ºC and 16ºC.

Tasting Notes:
Watermelon pink in colour. A very expressive and seductive nose, delicate red fruit reminiscent of strawberries and redcurrants, with hints of dried vegetables and pine needles in the background. The palate has a lot of verve, even more fruit than on the nose, good acidity and a slightly bitter finish that gives it nerve and depth.
Store and Serve Advices:
It should be served between 6 and 8º C.
Food Pairing:
For this fresh rosé, but full of personality, it would be a good match for spicy Mexican tacos, Galician-style octopus carpaccio, a typical cod with corn bread or a simple sausage board where spice reigns supreme.
