The grapes come from the Estremoz region, are 19 years old and located at an altitude of 350m, they are planted in clay-limestone soils influenced by marble parent rock. Harvesting is manual. When the grapes arrive at the winery, they are destemmed and pressed to a 55% yield. The pressed must decant in a stainless steel tank at a temperature of 10ºC for 48 hours. After being cleaned, it is inoculated in a stainless steel tank where its alcoholic fermentation begins. The wine is then transferred to 400-liter French oak barrels where fermentation continues and ends at a temperature of 16ºC for a period of 20 days. It remains and ages in 400-liter French oak barrels for a period of 6 months, in a fine lees “batonnage” process. 3 year old barrels.

Tasting Notes:
Attractive copper color. Expressive aromas of orange blossom, raspberries and hints of white roses. In the mouth it has a mineral freshness that offers an invigorating appeal, with a lot of flavor of orange blossoms and raspberries, persisting with sweetness.
Store and Serve Advices:
Serve at a temperature between 10ºC and 12ºC.
Food Pairing:
Ideal as an appetizer or with salads, Asian food or grilled fish.
