Made with 43% Trincadeira, 34% Aragonez, 17% Castelão, 5% Syrah and 1% Alicante Bouschet from 2017. The bunches pass through the sorting table into small 300 kg mills where, by bleeding, the skin/film ratio is extracted by 30%. Alcoholic fermentation takes place for 30 days without temperature control and with commercial yeasts in used barrels. Malolactic activity occurs partially spontaneously. Aged for 18 months in used Allier and Tronçais red barrels with monthly bâtonnage, plus 6 months in bottle.

Tasting Notes:
Cloudy petroleum colour, on the nose it presents an exuberance that merges oxidative touches with some reduction gunpowder, the candied fruit appears in the background to mark delicacy, in the mouth it starts off thin, going to an extreme volume ending with a dominant presence. Of original and gastronomic character.
Store and Serve Advices:
Keep the bottle lying down at 12ºC. Serve at 12ºC.
Food Pairing:
Meat, lamb and fatty fish dishes in the oven.
