Manual harvest. Skin maceration in vats for 12 hours. Pressing, followed by decantation by flotation. Fermentation in an open spout at temperatures of 14-18ºC, with constant raising of lees. Aged for 6 months in used French oak barrels with fine lees bâtonnage weekly.

Tasting Notes:
Clear citrus colour, with a subtle and fine aroma, with notes of white plum and flint notes. In the mouth the wine is intense and unctuous, with a marked acidity, which will certainly allow a positive aging in the next 5 years.
Store and Serve Advices:
The bottle should be kept in a dry and cool place, sheltered from light. Serve between 8°C-10°C.
Food Pairing:
Ideal with light meals such as fish dishes, sea-food and salads. However, its potential is also shown when enjoyed on its own or as an aperitif.
