It was decided early on that the backbone would be acidity over extraction. As soon as the mantle lifted after alcoholic fermentation began, the skins were removed to prevent further staining, and the tannins were extracted from the stems. Foot-trodden in a granite press at the Mateus Palace, the juice was processed in three different environments: stainless steel, new barrels, and used 2nd and 3rd-year barrels. Aged in stainless steel, new and used 225-liter French oak barrels.

Tasting Notes:
medium-deep to open ruby with bluish hues. With notes of evolution, iodine, and dried fruits. Very mineral and explosive. Intense, dense, and fresh. Saline notes, scraped stone, ripe fruit, and dried fruits dominate, giving it a mysterious tone. Strong acidity, complex, and very lively on the palate.
Store and Serve Advices:
Serve at 16ºC.
Food Pairing:
Excellent for game (hare, rabbit), roast lamb, roast pork, Portuguese stew and all types of intensely flavoured meat dishes.
