The grapes were hand-picked. In the cellar, after a new manual qualitative sorting, the grapes were fully destemmed and gently crushed. A short pre-fermentation maceration was carried out, and the fermentation took place in stainless steel vats at a controlled temperature of 20º C. During this period, pump-overs were carried out for a variable duration and interval. The malolactic processing was done in a used French oak cask. It matured in these same casks. Then, it matured for almost 6 months in stainless steel vats, for sensory improvement and increased complexity. To preserve its quality, it was bottled without treatment, thus allowing the formation of a natural deposit.

Tasting Notes:
Has a vibrant purple colour, stands out for its elegance and character from start to finish. Disruptive for its unusual precision and freshness, yet complex and distinctive. In the aroma, captivating and charming in the fruits of wild berries, violets, hints of cocoa and earthy. It evolves into pleasant balsamic notes, on a limestone minerality background. In the mouth it is wide, with energetic and vibrant fruit, greedy, irreverent, with captivating freshness and structure, fine-grained, intense and firm tannins. The finish is long, persistent and even disconcerting.
Store and Serve Advices:
Although it can be consumed right away, it has the potential to evolve positively in the bottle for several years, as long as it is stored properly. Open 1 hour before serving. Consume at a temperature of 14º C - 16º C.

This wine finely accompanies red meats, roast beef and grilled meats.
