Winemaking:
Varied grape varieties from three distinct plots of “hard ground” (not sandy, therefore not suitable for DOC), located in the parishes of Colares, São João das Lampas and São Martinho – geographical area of ​​the Colares region. Places with different types of bedrock, extremely close to the Atlantic and the Serra de Sintra massif. Harvest in 18kg boxes, with selection in the vineyard. Spontaneous fermentation in a stainless steel vessel. Destemmed grapes, tanned for 5 days. Aged 10 months in brown and mahogany barrels (1500l).
