Product details
Manual harvest. Upon arrival at the winery, the grapes are destemmed and crushed, and then transferred to conical vats where fermentation begins spontaneously, which normally lasts around 2 to 3 weeks at 26ºC. During this period, in which the wine is in contact with the grapes, pumping over is carried out twice a day. After fermentation is complete, the grapes are pressed and aged for 12 months, 50% in new barrels and 50% in used barrels. After bottling, the grapes are aged for 12 months in the bottle.
