Product details
The grapes are harvested by hand and transported to the winery in small boxes. This is followed by complete destemming, crushing and transfer to stainless steel tanks where they ferment at a controlled temperature of around 24 to 26ºC with very careful maceration until all the sugars are gone. Once the alcoholic fermentation is complete, the wine is transferred to another stainless steel tank and remains there until the malolactic fermentation begins, at which point the Touriga Nacional is transferred to used barrels for around a year. The rest of the batch ages in stainless steel. The final batch is made before preparation for bottling, when only a light fining with vegetable agents is carried out and then filtered immediately before filling the bottles in order to preserve all the aromatic potential. Therefore, as a product with only natural stabilisation, it is likely to create a deposit over time in the bottle.
