Winemaking:
The harvest took place in September. After careful selection in the vineyard, the grapes were completely destemmed and crushed. After 48 hours of cold pre-fermentation contact with the skins, fermentation took place in stainless steel vats at a controlled temperature and with a total maceration of over 40 days, but without major extractions. The wine was then transferred to stainless steel vats, where malolactic fermentation took place, and then aged for 12 months in new French oak barrels (500 liters).

Store and Serve Advices:
It should be opened a little before being consumed so that it can breathe and develop at its best. Over time, it can create sediments requiring decantation. Serve between 15ºC and 16ºC.

Food Pairing:
Bafarela 17 Superior is a surprising wine that goes very well with spicy dishes, especially traditional Portuguese cuisine. With Serra da Estrela cheese, for example, it pairs perfectly.
