Manual harvesting at night. The grapes are then selected at a sorting table, ensuring that only the best fruit enters the vat. The grapes are then taken to the fermentation tank by gravity, without the use of any pump, allowing a smooth and long extraction. Fermentation is spontaneous and the total tanning time is between 25-40 days. The second malolactic fermentation takes place partially in barrels (30%) and the rest in vat. Total aging before release is 10 years, divided into 36 months in 228-liter French oak barrels, around 12 months in 500-liter vats, and subsequently 6 years of aging in the bottle.

Tasting Notes:
Enxarrama wine is very red and full-bodied, crystal clear, tart, not smooth, with a warm and soft flavor, with a very pronounced aftertaste. It is not an alcoholic or aromatic wine, it is a strong and solid wine, which, due to its tannin, can tolerate its alcohol volume.
Store and Serve Advices:
Store at 12ºC and serve at 16ºC to be drunk at 18ºC.

A wine of great intensity and concentration that pairs well with intense meat dishes and strong cheeses.
