José de Sousa Mayor is the estate’s premium wine, and its concept and style aims to reproduce the key features of the famous 1940 vintage. If this is in itself a superb challenge the fact that conditions are such that the estate can produce José de Sousa Mayor virtually every year makes it a true quest. Part of the clusters are destemmed by hand. The grapes are delivered into the winery in 20kg plastic boxes and part is transferred into 3 tons open tops where they are foot trodden and fermented. The other part is fermented in large clay pots (1.500 litres) for about 10 days, followed by two weeks with skin contact. The wine was transferred directly into new French oak casks for 11 months. It was bottled without any filtration or cold stabilisation.

Tasting Notes:
Colour Dark ruby. Aroma of Dates, cistus, green tobacco leaf, spice (clay amphorae). Palate Very fruity with soft tannins.
Store and Serve Advices:
Should be served at a temperature of 16/18ºC, after having been decanted. This wine may throw sediment with age.
Food Pairing:
Goes well with game and cheese.
