The grapes were harvested manually and vinified for the first time on the island of Porto Santo. Tight selection in the vineyard, with some vines harvested more than once, picking the most mature ones first and the rest in a second harvest. Direct whole bunch press for settling tanks, three fractions being separated, without any use of SO2 until the end of fermentation, in order to allow pre-oxidation of the must and a fuller spontaneous fermentation. The musts fermented on lees in 250L and 500L stainless steel vats, and in 228L barrels, where they remained for a total of 11 months.

Tasting Notes:
Pale yellow colour, intense nose, saline, mineral, notes of gunpowder and iodine. In the mouth, a full, textured attack, the aromas are repeated in the nasal cavity. Super persistent.
Store and Serve Advices:
Store at 6-8ºC to be drunk at 10ºC. Keep the bottle in a horizontal position.
Food Pairing:
An Atlantic wine from limestone soils, which requires pairing with seafood, such as scallops, hard-shelled clams, which in its preparation include warm Flavors, such as semi-fatty fish with some intensity.
