The grapes were harvested by hand on Madeira Island and transported in 40kg boxes to Porto Santo Island. The grapes were sorted on a sorting table and the whole bunch was pressed directly into decanting tanks, with three fractions being separated, without any use of SO2 until the end of fermentation, in order to allow for pre-oxidisation of the must and fuller spontaneous fermentation. The must fermented in 500 litre stainless steel vats and a 228 litre barrel, on its lees for 9 months. Aged for 9 months, 88% in horizontal stainless steel and 12% in new French oak barrels.

Tasting Notes:
Clean citrus yellow colour. Pure mineral, citrus aroma with hints of pitanga. Tense, acidic attack with salinity very present. Good persistence.
Store and Serve Advices:
Store at 6-8ºC to be drunk at 10ºC. Keep the bottle in a horizontal position.
Food Pairing:
The fresh, very mineral and saline profile with high acidity makes it a good partner for seafood and oily fish.
