The grapes were harvested by hand on Madeira Island and transported in 40kg boxes to Porto Santo Island. The grapes were sorted on a sorting table and the whole bunch was pressed directly into decanting tanks. Three fractions were separated, without any use of SO2 until the end of fermentation, in order to allow for pre-oxidisation of the must and fuller spontaneous fermentation. The must fermented in two 550 litre stainless steel vats and a new 228 litre barrel, aged completely on its lees for 9 months. 85% in horizontal stainless steel and 15% in new French oak barrels.

Tasting Notes:
Clean citrus yellow colour. Fresh, mineral/volcanic aroma, with some tropical fruit. Tense attack, good freshness, with a lot of salinity present until the end.
Store and Serve Advices:
Store at 6-8ºC to be drunk at 10ºC. Keep the bottle in a horizontal position.
Food Pairing:
The fresh, very mineral and saline profile with high acidity makes it a good partner for seafood and oily fish.
