The harvest of this batch began on September 29th and continued until mid-October. The grapes were transported in 20kg boxes to the winery, where they were selected on the sorting table. They were then partially destemmed and crushed into stainless steel tanks. Alcoholic fermentation took place over 12 days, with the temperature controlled at 23ºC, during which pumping over was carried out every 2 hours, with each cycle lasting 3 minutes. Once the alcoholic fermentation was complete, 100% of the batch was aged for 12 months in new barrels, 75% French oak and 25% American oak.

Tasting Notes:
Clean and bright wine. Complex, deep and elegant aroma with aromas of ripe black fruits, especially blackberries. On the nose there is a perfect harmony between the fruits and the nuances of spices derived from vanilla and wood. On the palate it is full-bodied, with a good balance between the black fruit, the very polished tannin and good acidity. Long and persistent finish.
Store and Serve Advices:
It is recommended to store in a cool place, at a constant temperature (ideal storage temperature 12ºC), away from light, and in a horizontal position.
Food Pairing:
This grape variety is easy to pair with a variety of foods. It pairs perfectly with red meat and game, strong-flavored cheeses and spicy and seasoned dishes.
