Winemaking:
Grapes from the islands of São Miguel and Pico, manual harvest, selection on a sorting table, partial destemming (30% whole bunch), spontaneous fermentation, 30 days of skin contact. 6 months aging in neutral cask and 2 years aging in bottle.

Tasting Notes:
Open, garnet colour, very intense nose, lots of personality, aromas of acid wild strawberry, earthy notes, truffle with a splash of iodine and sea. In the mouth has medium body, very textured, salty, acidity always present, iodine and earth are repeated.

Store and Serve Advices:
Store the bottle lying down away from direct light. Serving at a temperature from 16-18°C.

Food Pairing:
Complex fish dishes and elegant meat dishes where acidity is lacking and where iodine and sea, or earth and truffle are dominant notes.

Allergens:
Contains sulphites.
