The objective was to make a mineral wine, with a very good natural acidity, from a grape variety that traditionally originates sweeter wines with less acidity. This wine began with a gentle pressing not to extract herbaceous flavours. After 48h in decantation at 10ºC, the fermentation takes place in stainless steel tanks between 14ºC and 16ºC. The fermentation lasted for almost 3 long weeks in order to extract the primary aromas of the grape variety.

Tasting Notes:
It is bright with greenish citrus colour. In the aroma is marked by an intense minerality counterbalanced with aromas of orange and lemon blossom, typical of the Moscatel variety of Setúbal. In the mouth it has a good structure, very fresh and vibrant. End of mouth with some persistence.
Store and Serve Advices:
Serve at a temperature between 12ºC.
Food Pairing:
Pair with fish, shellfish, salads and Italian cuisine.
