Complete manual destemming, followed by gentle crushing and skin maceration for approximately 18 hours. After this period, the grapes were pressed in a pneumatic press, followed by a period of clarification of the must, lasting 24 to 48 hours. The first third of the fermentation took place in stainless steel vats at a controlled temperature of 12°C; the remainder of the fermentation took place in French oak barrels, in a controlled environment at 15°C. This was followed by battonage for a period of 8 months in barrels.

Fresh and complex, with citrus fruit, in harmony with discreet floral nuances and strong mineral notes typical of the terroir, complexified by light hints of wood. Surprising volume in the mouth. Very long, fresh and mineral finish.
Store and Serve Advices:
Serve slightly chilled, between 12 and 14ºC.
Food Pairing:
It is an ideal white to accompany all types of fish, seafood or white meat.
