Product details
Grapes were completely destemmed and pressed under an inert atmosphere to preserve their aromatic potential. The fermentation process took place in stainless steel vats at a temperature between 16°C and 18°C. Approximately 85% of the batch remained in stainless steel vats for two months, subjected to bâtonnage (drainage). The remaining 15% fermented and aged in used French oak barrels, where they also underwent bâtonnage for two months.
