The grapes were pressed with a continuous press in September 1982. Fortification was carried out while the must was still fermenting, in a semi-dry state (2 Baumé). The aging process began in March 1983 in old 620-liter French oak barrels in Warehouse A—considered the warmest of the various warehouses where we store our wines. In November 2013, part of this wine was transferred to 64-liter demijohns. The remainder was placed in 430- and 450-liter barrels, this time in Warehouse D, whose average temperatures are significantly lower than those of Warehouse A. The excess concentration acquired over the first 30 years of aging was substantially reduced over the following 12 years, thanks to the change of warehouse and the use of smaller, always filled, barrels. This practice allowed us to restore the wine's freshness and enhance its acidity. We selected a 430-liter cask for this bottling, limited to 300 units.

Tasting Notes:
Amber colour. The bouquet presents an excellent concentration of jam, hints of ripe fig, raisins, pine, a slight vinegary note, nutmeg, brown sugar, and polished wood. Highlights include the sharp acidity that envelops the entire palate. Molasses flavours in a robust, somewhat spicy finish with lingering freshness.
Store and Serve Advices:
Recommended serving temperature between 14/16ºC.
Food Pairing:
Excellent as a digestive, with blue cheese and/or a cigar.
