The grapes were pressed using a continuous press in September 1978. Fortification was carried out while the must was still fermenting, in a semi-dry state. The aging process began in March 1979 in old 620-liter French oak barrels in Warehouse A—the warmest of the several where we store our wines. In December 2008, the wine was transferred to 450-liter barrels, this time in Warehouse D, where average temperatures are significantly lower. The concentration acquired over the first 29 years of aging was substantially attenuated over the following 17 years, thanks to the change of warehouse and the transfer of the wine to smaller-capacity barrels. This practice allowed us to preserve the wine's balance until bottling.

Tasting Notes:
Amber colour. This wine presents sweet notes and a very delicate aroma. Hints of quince jam, English cake, nutmeg, cloves, and dried tobacco leaf. Velvety on the palate and excellent concentration on the rich, deep palate. Balanced acidity with a fresh, nutty, and slightly spicy finish.
Store and Serve Advices:
Recommended serving temperature between 14/16ºC.
Food Pairing:
Excellent as a digestive, with blue cheese and/or a cigar.
