Winemaking:
Maturation control to obtain the best balance between intensity and freshness. Grapes hand-picked into small 40L boxes. Reception at the winery with selection, total destemming and immediate crushing. Fermentation with temperature control around 16ºC, using very gentle crushing and pressing processes under an inert atmosphere. Part of the batch was fermented in French oak barrels, aged until spring of the following year, with fine lees -“bâtonnage”.

Tasting Notes:
White wine with a pale yellow colour with great aromatic complexity. Very fresh notes of exotic and citrus fruits, balanced by toast notes from the aging in barrels. In the mouth it has an enveloping and smooth texture, with a good balance with a wide and long aftertaste.
Store and Serve Advices:
Bottles lying horizontally in an airy and dark place, between 12 and 13ºC. Should be served at a temperature of 10 to 12ºC.
Food Pairing:
A gastronomic wine, to accompany fish dishes, such as oven-roasted cod, soft sheep cheeses or white meat.
