Winemaking:
In the vineyard, the grapes are produced only in vineyards established on the estates of members, in the Borba sub-region. These are inspected and certified as part of an integrated production system before being approved for the Alentejo wines sustainability plan. The grapes are harvested by hand in the morning when the temperature is cooler. This improves control over the quality of the must and afterwards over the fermentation of the wine. In the Winery, once the grapes have been destemmed and crushed, the must is strained and gently pressed to safeguard the quality and characteristics of the must. The must clarifies for 18 to 24 hours and then ferments at a temperature between 16 ºC and 18 ºC for 14 days. The wine is stirred on the fine lees (bâtonnage) for 3 months and is stabilised through physical processes in the following months, during the winter.

Tasting Notes:
Citrus colour. It has a young intense aroma of citrus and tropical fruits. The taste is very crisp, with unctuousness and structure in which the minerality and tropical fruits persist.
Store and Serve Advices:
Best served at 8-10ºC.
Food Pairing:
Good with seafood, grilled fresh fish, white meats and as an aperitif.
