Hand-harvested. Rigorous manual selection of the bunches. Total destemming, followed by pre-fermentation maceration. Fermentation with moderate temperature control and gentle daily manual pump-overs. Long post-fermentation maceration. Aged in 225L French oak barrels for 18 months. Unfiltered and unstabilized wine. May develop sediment.

Cabernet Sauvignon,Touriga Nacional
Tasting Notes:
Intense red color with violet reflections. Still very young but already showing its "race" and complexity, hinting at its promising future. A beautiful combination of ripe black fruits (blackberry, blueberry), shrubby notes (rockrose, rosemary), and spices (black pepper and clove). Silky attack, very elegant body and unusually fresh for its beautiful structure. Good tannins, fine and soft, well integrated with the fruit. Persistent, ample and very long finish.
Store and Serve Advices:
It should be enjoyed at a temperature between 15ºC and 17ºC, preferably in Bordeaux-style glasses. We recommend decanting it.
Food Pairing:
Intense and firm, it pairs particularly well with strongly flavored cuisine, such as oven-roasted kid goat or aged meats.
