Product details
Winemaking:
At the optimal point of ripeness, the harvest is carried out at night, mechanically, with total destemming, in order to preserve the integrity and freshness of the grapes as much as possible. Upon arrival at the winery, the grapes undergo gentle crushing, respecting the aromatic expression of the grape varieties involved. Alcoholic fermentation takes place in stainless steel tanks at controlled temperatures, with gentle pump-overs throughout the process, promoting a balanced extraction of phenolic and aromatic compounds. After alcoholic fermentation, malolactic fermentation follows, contributing to the wine's rounder and more structured profile. The final blend ages 25% in stainless steel tanks and 75% in new and used French oak barrels for nine months, benefiting from controlled micro-oxygenation and the subtle integration of the wood, which contributes to its complexity and elegance.
