The best Alicante Bouschet grapes are picked and selected by hand. They are crushed gently and macerated for 3 days in stainless steel vats at a temperature of 10ºC. This is followed by alcoholic fermentation at a controlled temperature lasting approximately 10 days. After gentle pressing in a pneumatic press, malolactic fermentation takes place in stainless steel and when finished the wine is transferred to 500 litre French oak barrels which allow for a gentle evolution during the 10 month ageing period, with low wood extraction and preservation of the fruit. After bottling, it is aged for 4 months in the bottle.

Tasting Notes:
Clear, bright appearance and intense ruby colour. Extremely elegant aroma, with a young and fruity profile, marked by notes of ripe red fruit. Good aromatic intensity, with notes of ripe red fruit, velvety structure, silky texture and good unctuousness marked by the presence of a soft, smooth tannin.
Store and Serve Advices:
Store in a cool, dry place away from light. Serve at between 16º and 18ºC. Suitable for immediate consumption and can age for up to 5 years after bottling.
Food Pairing:
Ideal with cheese boards, rooster stew and roasts of game or white meats.
