Very careful manual harvest and a tight selection in the cellar. Vinified in stainless steel vats at a controlled temperature of around 14 º C - 16 º C. Aged 14 months in French oak barrels and 14 months in bottle.

Quite how the winemaker has managed to nurture the humble Negra Mole grape to give us a smooth and delightfully light wine in the Burgundy style, even with the typical leathery notes along with fresh berry fruits, is, to say the least, surprising.
Store and Serve Advices:
Serve at a temperature of 16ºC to 18ºC.
Food Pairing:
Fantastic with Iberian smoked ham, roasts, game, smoked meats and other typically Mediterranean and intense dark meat dishes. Excellent with cured goat cheeses.
