Careful canopy management to optimize aromatic potential of these grapes. Handpicked grapes, with bunch selection in sorting table. Grapes processed at very low temperatures (<4ºC). Soft pressing. Fermentation in concrete tank under controlled temperatures. Bâtonnage in tank until bottling. Viticulture method: integrated production.
