Manual harvest, with qualitative selection, during several weeks according to the state of maturation. Total destemming, crushing and pressing. Open spout vinification. Fermentation in stainless steel vats with temperature control. Interruption of the fermentation, 6 to 7 days after the beginning of the alcoholic fermentation, through the addition of 96º wine alcohol in order to maintain the desired amount of sugars. Vinification made according to traditional methods. Stuffing in stainless steel vats for 3 months, with temperature control (45 to 50ºC) and pump over. After stewing and before bottling, the wines are aged in oak casks for a minimum period of 5 years.

Tasting Notes:
Golden shiny colour. Elegant and intense aroma, with hints of dried fruit and honey. Note of candied dried fruit. Long, complex and elegant finish reminiscent of walnut.
Store and Serve Advices:
Store in an upright position, protected from sunlight and in a moderate atmosphere without large variations in temperature. Serve between 12/14ºC. Bottled ready-to-drink but keeps for several months in good conditions, after opening the bottle.
Food Pairing:
Delicate fruit notes make this Madeira an excellent aperitif with starters, light soups, consommé, olives and smoked ham.
