Winemaking:
Grapes were hand-picked in excellent health, and placed in small boxes (17 kg). The full bunch was pumped into a pneumatic press, and the initial juice was drained, without pressing. Fermentation was carried out in stainless steel vats with temperature control (16ºC). Fermentation was completed and the wine was aged in used French oak barrels (225 litres) for 7 months. The wine was released after an additional year of ageing in the bottle.

Traditional grape varieties
