After reception in the cellar, the grapes are destemmed and immediately cooled. Gentle pressing at low temperatures, followed by cold static decanting for 3 days, with the lees rising in the first 24 hours. Fermentation at a controlled temperature of 14-15ºC. After alcoholic fermentation, the wine aged for 6 months on its lees with frequent bâtonnage. Part of the blend aged in used French oak barrels.

Tasting Notes:
Light citrus colour. Very exuberant aroma with notes of tropical fruit, particularly passion fruit. The palate is fresh and vibrant, with passion fruit notes standing out in harmony with citrus notes of grapefruit and lemon. The acidity is very well balanced by the ageing in wood, which gives it complexity and a certain creaminess. Long and very persistent aftertaste.
Store and Serve Advices:
Bottle horizontally. Ready to drink young, it reaches fullness 2-3 years after the harvest and can continue to evolve positively for a few years. Recommended serving temperature: 10ºC to 12ºC. Consume within 24 hours of opening.

The profile of this wine makes it ideal to accompany seafood, grilled fish, elaborate salads or simply to enjoy by the glass.
