Product details
The grapes were harvested with a low alcohol content, allowing the wine to have greater acidity. The freshness of the Atlantic Ocean is noticeable, as is the aromatic component of the wine. The freshness, exuberance and salinity is possible in this wine due to the terroir of the Lima sub-region. The grapes are harvested by hand in small boxes and transported to the winery in a short space of time, in a refrigerated environment. The whole destemmed grapes are pressed. Cold clarification for 48-72 hours. Long fermentation in used French oak barrels. Aged for around 1 year on fine lees with regular bâtonnage. Manual harvest, fermentation in stainless steel vats and ageing for 3/4 months in stainless steel vats.
