Winemaking:
Destemming: Total, with a small percentage of whole bunches in Loureiro. Maceration: In amphorae, with skin contact for 12 weeks. Fermentation: Spontaneous with indigenous yeasts, in amphorae, at 15ºC. Chestnut blossom: 500g added crushed to the wine mass, following monastic tradition. Malolactic Fermentation: Yes. Aging: In amphorae until the beginning of January. Pressed in January, bottled in February with direct pouring. Finish: Unclarified and unfiltered. May present natural sediments.

Loureiro,Azal
