Product details
Harvested by hand into 20kg boxes, which are quickly transported to the winery, where the bunches are slowly pressed whole. The obtained must is poured into stainless steel vats, where it rests for 36 hours. Decanting follows to remove the must from the lees. Once the must is clean, it is poured into stainless steel vats where it ferments at a controlled temperature of 14 degrees. After about 30 days of fermentation, the wine is removed from the lees and released, still cloudy (with fine lees), into another vat, where it is aged for no less than five months. During ageing, it undergoes weekly batonnage. After filtering, it is bottled. It goes on the market one month after bottling.
