The Folgasão from Quinta da Trovisca (600m) was hand-harvested and fermented with indigenous yeasts in used 500L barrels (French and Hungarian oak) at 16–20°C. Pressing was gentle and cold settling followed for 48 hours. It aged for 5 months on fine lees with weekly bâtonnage. Malolactic fermentation was avoided to maintain acidity. The wine shows structure, freshness, citrus notes, dried herbs, and a saline finish.

Tasting Notes:
Pale lime green. A wine with pronounced aromatic intensity, with notes of green apple, lemon tart, vanilla, and wet stone. On the palate, it is dry with a refreshing and vibrant acidity and minerality. The oak is very well integrated and does not overpower the fruity flavors. The finish is persistent, with citrus and toasty nuances.
Store and Serve Advices:
Serve between 10ºC-12ºC.
Food Pairing:
A quintessential gastronomic wine, ideal for pairing with fattier fish, such as grilled salmon or tuna, and Japanese cuisine dishes like sushi and sashimi.
