Manual harvest, in which the bunches are carefully transported to a cold room, avoiding oxidation and colour extraction. In the cellar, selection on a choice mat, light crushing of the berry using a centrifugal method, followed by cold pressing. The must decants for about 48 hours in a stainless steel tank, subsequently starting the fermentation, half in used and new French oak barrels of 225L and 500L and the other half in a stainless steel tank. Finally, it ages on fine lees for about 6 months with bâtonnage.

Tasting Notes:
Light salmon colour with a shiny appearance. Nose with hints of peach and slight mineral, to which are added elegant notes of barrels. On the palate it is fresh, slightly saline, balanced and with pleasant texture and intensity sensations.
Store and Serve Advices:
It should be drunk between 8-10ºC. Must be open between May 2021 and August 2022.
Food Pairing:
Excellent with lean grilled meat, pasta, pizza and ideal with aperitifs. Also goes well with tapas, sushi, risotto and highly seasoned fish.
