Tasting Notes:
With a very fine, super-persistent bubble, it boasts a slightly coppery colour with salmon hues. The nose is complex and layered, revealing notes of wild strawberry, fresh raspberry, and cherry, enveloped by a slightly floral aroma. Then comes brioche and a subtle touch of sweet spices. The palate is lively and minerally. The creamy mousse creates an excellent balance between freshness and structure. The mouthfeel is based on ripe red fruits and a continuous mineral freshness. The finish is long and tense, marked by light toasted notes that prolong the pleasure of the tasting.
Store and Serve Advices:
Between 6°C and 8°C. All the complex aromas developed during the autolytic stage, that is, the time spent in the bottle in full contact with the lees of the second fermentation, are now at their best and will remain so for another 2 to 5 years.
Food Pairing:
Ideal as an aperitif for social gatherings or to accompany fish, seafood or pasta dishes.
