Tasting Notes:
With very fine, persistent bubbles, it boasts a bright straw colour with light golden hues, belying its nearly 10 years of age. Its aroma is of freshly picked citrus peel, combined with pronounced autolytic notes (biscuit/brioche), very well integrated. Layers upon layers of extremely captivating aromas. On the palate, the mousse is perfect and, together with the vibrant acidity, contributes to a mineral sensation, a signature of Colinas sparkling wines. The finish is very long, with a complexity that unfolds in layers ranging from citrus aromas to bakery aromas, and even quince aromas. Everything is always very fresh and minerally.
Store and Serve Advices:
Between 6°C and 8°C. All the complex aromas developed during the autolytic stage, that is, the time spent in the bottle in full contact with the lees of the second fermentation, are now at their best and will remain so for another 2 to 5 years.
Food Pairing:
Ideal as an aperitif for social gatherings or to accompany fish, seafood or pasta dishes.
