Winemaking:
The grapes are gently pressed at low pressure, followed by the 1st fermentation in stainless steel vats at controlled temperatures. Selection of a specific yeast, as neutral as possible, to ensure the desired flavours in the 2nd fermentation. After the 1st fermentation, the wine is aged on fine lees with weekly batonnage. Part of the blend goes through wooden barrels to acquire tertiary aromas, giving rise to greater aromatic complexity with notes of toast. The 2nd fermentation takes place in pressurised stainless steel vats with agitators that ensure the lees are lifted during the sparkling process, continuing the batonnage process and adding greater structure and complexity. The lower temperature of the 2nd fermentation, between 12 and 14ºC, ensures a fine and persistent bubble.

Tasting Notes:
Clear, crystalline appearance with an open citrus colour. Delicate aroma, medium intensity aromatic profile, with notes of white fruit and some brioche. Young and fresh, good aromatic complexity, creamy and unctuous texture. Mineral and slightly fruity notes, with hints of toast. Fine, persistent bubbles emphasising a fresh, clean finish. It has balanced acidity making it smooth, elegant and with a long finish.
Store and Serve Advices:
Store horizontally in a cool place away from light. Serve at between 6º and 8ºC. Consume within 3-4 years of bottling.
Food Pairing:
It can be enjoyed as an aperitif with snacks or soft cheeses and harmonises well with grilled or roasted fish, seafood and Japanese cuisine. It goes perfectly with citrus desserts such as lemon tart and orange sorbet.
