Product details
The grapes are harvested by hand and the previously selected grapes are pressed whole to obtain a high quality must. The must is clarified for 48 hours and fermented at a temperature of between 15 and 17°. After fermentation, the wine is aged on fine lees for 5 months. Bottling is then carried out for the second fermentation (classic method) and ageing for 12 months, finishing with remuage and degorgement.

Tasting Notes:
It has a fine, persistent bubble and reveals floral, citrus notes, a slight toastiness and biscuit on the nose. The palate is creamy, dry, elegant, full-bodied, persistent and with good acidity.
Store and Serve Advices:
Serve at temperature of 8-10ºC.
Food Pairing:
Excellent as an aperitif, as well as accompany fish dishes and seafood.
