Winemaking:
Lou 38 is fermented according to the ancestral method, with cold maceration (7ºC) for four weeks. Fermentation occurs spontaneously in stainless steel tanks (75%) and clay amphorae (25%). During vinification, ground chestnut blossom is added to promote fermentation and natural stabilization. The wine is pressed with approximately 20 g/L of residual sugar and bottled, where fermentation is completed. It does not undergo filtration or clarification.

Tasting Notes:
Lou 38 presents a delicate aromatic profile with notes of fresh citrus, white flowers, and a very pronounced saline minerality. On the palate, it is light, dry, with fine bubbles and lively acidity. The texture reveals controlled skin maceration, giving it a subtle structure and enormous freshness. It is a vibrant and gastronomic pet-nat, with a dry and clean finish.
Store and Serve Advices:
Serve at 10-12ºC.

Grilled limpets, octopus or lobster; Tuna tartare with ponzu sauce; Fresh cheese; Seafood rice with herbs; Atlantic and vegetarian cuisine.
