After previously cooling to 5ºC, the grapes were pressed gently, without crushing or de-stemming. The must obtained was clarified by static decantation, followed by alcoholic fermentation, at controlled temperature, to obtain the sparkling wine base, which remained on the fine fermentation lees for 1 year. After the extraction, the second fermentation took place in the bottle (champagne method). The aging period on the fermentation lees lasted approximately 15 months in the bottle.

Tasting Notes:
With a fine and persistent bubble, it is very elegant and harmonious. Intense and distinct, it combines notes of citrus and some white fruit with nuances of toasted bread. Full-bodied and very persistent, with a beautiful acidity, it finishes beautiful and complex, but marked by the minerality typical of the variety that gave rise to it.
Store and Serve Advices:
It should be served at 6-8ºC.
Food Pairing:
Excellent as an aperitif, and accompanying light meals, roasts or even desserts.
