Manual harvest in 18 kg boxes, selection of grapes on a sorting table directly to the press, soft and quick pressing to avoid oxidation of the must and excess of vegetal components. Static clarification for two days with the lees in suspension. Fermentation at 14ºC. After fermentation, 20% of the wine aged in used French oak barrels for 9 months. After that, the wine was stabilized and filtered.

Tasting Notes:
Salmon pink colour. Delicate aroma, initial red fruit, cherry and blackcurrant complemented by spicy and lightly toasted notes. Serious and classic palate, revealing the purity of the terroir, all dry but tasty and harmonious. A cheerful note in a serious and refined profile where fine acidity, well contextualised with volume, extends into the long finish.
Store and Serve Advices:
Serve at a temperature between 10ºC and 12ºC.
Food Pairing:
Perfect with Japanese cuisine, fatty fish, soft and mild cheeses.
