Winemaking:
Grapes from a single plot are hand-picked into small boxes, with a large selection in the vineyard. Only bunches in perfect ripeness and health are harvested. Complete destemming. Soft pressing of the entire grape. Transport of the must to the vats by gravity. Clarification of the must by cold. Long fermentation at controlled temperature. Aged for 10 months in used 225L barrels. Subsequently, aged for 9 months in the bottle.
