Grapes are immediately destemmed, crushed and cooled to a temperature of 10ºC ( 50ºF) during eight hours before pressing and clarification. The temperature is then set to 14ºC (57.2ºF) and, once the fermentation process has set in, the fermenting juice is then partially transferred to oak barrels. After fermentation, the wine goes through “bâtonnage” for a few weeks and aged until the end of winter. The wine from the barrels is then blended with the part aged in inox tank and bottled at the beginning of spring.

Tasting Notes:
This wine presents a distinct citrus colour, aroma of tropical fruit and hints of citrus and vanilla. Good volume on the palate and excellent freshness.
Store and Serve Advices:
Store the bottle lying down at a temperature of 15°C. Serving at a temperature from 10-11°C.
Food Pairing:
Good with seafood, grilled fresh fish, white meats and as an aperitif.
