After careful selection of the grapes in the vineyard, vinification takes place with the whole bunch, lightly trodden by foot in a cement press, where it ferments spontaneously at a controlled temperature. After a maceration period of around two weeks, the grapes are pressed and the wine continues its fermentation processes in 500-litre French and Austrian oak barrels. The wine is aged for 30 months in barrels, followed by a year in stainless steel, where it naturally stabilises over the seasons. Bottled manually, by gravity without filtering or fining and with minimal SO2 adjustments.

Tasting Notes:
Quinta da Carolina is a wine with a slightly extracted profile, looking for the elegance and freshness that an old vineyard exposed to the north can give us. Open ruby in colour, shallow, with herbaceous notes combined with fresh fruit on the nose, deep and persistent on the palate with a strong presence of the Douro and notes of ageing in wood. A wine to enjoy while young, but with a clear aptitude for ageing.
Store and Serve Advices:
Should be served at a temperature of 16ºC. Decanting is advisable.

Ideal with meat-based meals or by the glass.
