The grapes, hand-picked at the optimum stage of ripening, were fully destemmed and softly crushed in a pneumatic press. The must, which was naturally decanted, fermented in French oak barrels from four different cooperages, and was subjected to soft lees-stirring that gave it added complexity and softness. It matured for a further 6 months in the new French oak barrels in which it fermented, following which it was filtered and bottled.

Tasting Notes:
It has fine body and acidity, with a unique ageing potential. With a straw-like yellow hue, this wine displays a sophisticated and subtle bouquet, with a prevalence of white fruits, floral notes and perfectly integrated oak notes from the time it spent in barrel. On the palate, it has a lively attack, a fine acidity, a full body, and the distinctive mineral component so typical of the Encruzado variety, along with excellent harmony and a long and well-balanced finish.
Store and Serve Advices:
This wine has a long ageing potential in the bottle (5-10 years), provided that the latter is kept horizontally in a dry and cool place, sheltered from light. Serve between 10ºC-12ºC. Once open, it should be drunk immediately, although it may be kept in the refrigerator for 2 to 3 days, well corked, preferably under vacuum.
Food Pairing:
Ideal on its own, or with fish and sea-food dishes, main course salads, white meat, game and fowl, as well as some cheeses.
